Pumpkin Spice Mini-Muffins with Cinnamon Chips


This is honestly one of the easiest and tastiest recipes I have ever made!  So simple and so tasty!

My sister introduced me to this easy recipe last week when she served these mini-muffins as a breakfast option for a house full of guests.  They are so delicious and easy to make - why wouldn't  you?


Ingredients
1 box of spice cake mix
1 can of pumpkin
Cinnamon or Chocolate chips

Are you ready for the instructions?   They are so difficult (she says with great sarcasm)

Mix cake mix with pumpkin.  Add chips - as many as you desire!  That's it!   Three ingredients and you're done.


It even looked good in the mixer!  For this batch I had run out of cinnamon chips so I did half with cinnamon and half with mini chocolate chips.


What could be better than a pumpkin spice with cinnamon (or chocolate) muffin during Fall?  I mean really?   What could be better?

  2. I used the regular size can of pumpkin (similar to a soup can) and baked at 350
